My days of going to Richland on Thursday night might be coming to an end soon. The classes L is taking are supposed to be moving back to Kalamazoo which will make getting her there and picking her up so much easier.

We still have a few more weeks going to Richland though.

I got off work earlier than I needed to on Thursday and started driving up Gull Road towards Richland. I’ve eaten at pretty much every restaurant there so I figured I was going to have to stop in Comstock Township to get something to eat before I got too far down the road.

I didn’t really have any plans but I saw earlier in the week that a food truck had been parking out that way. If I saw them there when I drove by, that’s where I was going to stop.

Zazzano’s Pizza has been around a couple of seasons now. They got their start last summer with a pop up tent but upgraded to a big red food truck this year. They have been parked at Wax Wings Brewing recently and that’s where I found them last Thursday night.

There was a little bit of a line when I pulled in to the parking lot around 6:30 PM. There was one guy who was heading in to Wax Wings who was ordering three pizzas and a couple in front of me ordering two. It’s a one man operation so I was told it was going to be about twenty five minutes. The guy who was ordering three told them to make mine first since it was just me and I was taking my pizza to go which was really nice of him.

The pizza options are all custom. They’re about a twelve inch round and you start by selecting cheese. It’s either fresh or shredded mozzarella and which one you pick determines the base price. The fresh mozzarella is a little more expensive. I picked the shredded mozzarella and added basil and prosciutto. The cost was $17 before tip.

Like I mentioned, the guy taking the orders, making the pizza and cooking the pizza is all the same person. He has two ovens set up outside of the truck so there’s a bit of back and forth. Once he has the pizzas in, it only takes a minute or two to fully cook.

With my pizza, he cooked it without the prosciutto then added it on later so it didn’t burn. Once he got it boxed up, I headed back to my car to eat before heading out to Richland to pick up L.

These quick fired pizzas are really good. The crust has a bit of crispiness to it but it’s still soft and chewy. There is at thin layer of sauce and cheese so the fresh basil and saltiness of the prosciutto really shine through. I was going to eat a couple of pieces and get on my way but I could stop myself. This pizza was really good. When I cook this pizza home, I usually do put the prosciutto on before putting it in the oven because I like the crispiness it adds but putting it on after really like the saltiness of the meat do it’s work.

I saw Zazzano’s out a few times last year but never had time to stop. I’ve been stalking them a bit this year on their Facebook page because I keep hearing good things about them. I’d like to add to those good things. If there’s a line, it may take a bit to get your pizza but it will be worth the wait.
