Food TruckLunchtime Live is back, y’all.
I look forward to Friday’s in the summer all year long. Not just because it’s a Friday….in the summer…but also because the food trucks are back at Bronson Park.
A lot of the usual suspects have been at Lunchtime Live the first few weeks but I really like seeing what’s new this year. What new, interesting food creations to serve out of the side of a panel truck have people come up with over the winter?
The first new one for me this year is Mac N More. The large yellow food truck based out of Kalamazoo serves up gourmet mac ‘n cheese.
There was a little bit of a line when I walked up around 12:30 but that’s not unusual for Lunchtime Live. The woman working the window was getting through orders as quickly as she could and as quickly as the guy putting the bowls together could hand them out.
There is a white board sitting on the ground next to the truck with the menu. All of the options sounded good. Each one of the bowls is a creamy mac n cheese and then it’s topped with other ingredients to make them “gourmet”
I picked the Buffalo Chicken Mac because I almost never turn down anything with Buffalo sauce. This bowl is topped with smoked chicken, green onions, bread crumbs, and Buffalo sauce. I could have done without the onions but they weren’t that much of a distraction. The chicken was super tender and covered in the buffalo sauce. The combination of the gooey, creamy, cheesy macaroni with the Buffalo sauce was pretty great. I saw some of the other creations coming out of the window and while they all looked amazing, I think I went the right direction with the Buffalo Mac
The cost for my lunch was exactly $10.
Gourmet mac n cheese has been all the rage for a few years now but it’s almost always delicious. Mac ‘n cheese is such an easy, delicious option for food trucks. You can cook everything ahead of time and get it out the window quickly. Mac n More took a fairly common idea for a food truck but it’s an idea no one in Kalamazoo has tried yet. There’s definitely a market for it and I’m looking forward to more Lunchtime Live Friday’s to try the other gourmet mac creations.
