Press Release – The Union Cabaret and Grille to Undergo Changes

October 10, 2012

From a Millennium Restaurant Group press release…

The Union Cabaret & Grille to release new menu and enhanced concept
KALAMAZOO, Mich.— Millennium Restaurant Group-owned The Union Cabaret & Grille will soon release its new menu
and open to the public with a refreshed look on Thursday, October 11 at 8 p.m. with live music by The Skeletones.

Although The Union Cabaret & Grille will offer a new menu and updated decor, Union classics such as the Lobster
Fondue will still be available and the restaurant will continue to provide free live entertainment.

In order to update, the restaurant will be closed from midnight on Tuesday, October 9th to 8:00 p.m. on Thursday,
October 11th. The short closing period will include installation of a new menu which offers daily features for both food
and beverage (wait ’til you hear about Friday’s “Cut Out Early” happy hour), more casual uniforms for the staff, new
chairs and tables, a great looking feature wall, along with other enhancements.

The “new” Union Cabaret & Grille will continue to be the home of house-infused spirits, local Michigan beers, free live
jazz, blues, funk and more… All in the heart of downtown Kalamazoo.

“The Union is not changing but improving and placing a heavier emphasis on menu and menu design (both food and
beverage). The concept evolution started with us revisiting our original thoughts for The Union 12 years ago and then
rethinking its style. There is a wonderful history of music and food in America… They both rode down a similar path.
We wanted to follow that same direction and offer our guests great Americana-style dining and as always , The Union
will serve as an excellent atmosphere for live entertainment,” says Bob Lewis, Millennium Restaurant Group Partner. “It
has an infectious energy and the changes and enhanced cuisine will only add to that energy. I think our new tag line
sums it up best… The Union – where food, drinks, friends, and music meet.”

Among the new items include:
–> Sweet Potato Bisque: a classic version made with puree of sweet potato, spice, and a touch of cream.
–>Sausage Mac: char-grilled sausage, rustic-cut cork screw pasta, sharp cheddar cheese cream sauce, toasted
garlic bread crumbs, and a side of your choosing like Sweet Corn Butter Biscuits or Braised Greens.
–> BBQ & Braises Combos: includes chicken, ribs, pulled pork, and others served with six signature house-made
sauces that are all gluten free (the Green Carolina Sauce is truly spot on… just delicious).
–> Grilled Cheese Fridays: Our take on this classic “slice” of Americana. –actually , it is just some cheese in between
two slices of bread, but darn is it good!
–> The Leftovers Turkey Sandwich: house roasted turkey breast, pulled from the fridge, carved and served on
toasted thick slice sourdough with orange cranberry mayo and crisp lettuce.

“We hope that people come out and join us. We are rolling out the changes to the public this Thursday at 8:00 p.m.”
says Lewis. “Speaking of Americana, we could not have picked a better band to help us kick off the change. The
Skeletones, a local favorite, are playing and should pack the house.”

The menu will be comprised of old favorites (14 to be exact) and hearty Americana-style dishes. A selection of gluten
free options are available as well. For beverages, The Union will still focus on really great cocktails and will continue to
surprise guests with innovative and unique selections like our house-infused vodkas, mojitos, and “mind-your-waistline”
selections. Don’t worry, only limited alterations to the look of the restaurant will be made to ensure that the
comfortable and lively atmosphere guests have come to know and love will remain. The Union Cabaret & Grille will be
closed from midnight Tuesday, October 9 through part of Thursday, October 11. Doors open Thursday the 11th at 8 p.m.
